Ricotta pie is a rich, sweet, creamy dessert, and this ricotta pie recipe from Maine's Old Granite Inn features cinnamon, cloves and other delicious spices that will remind you of autumn or winter in New England. Ingredients:
- 1 9" deep-dish pie shell
- 2 eggs
- 2 tsp grated orange zest
- 1 tsp vanilla
- 2 cups ricotta cheese
- 1/4 cup sugar
- 1/2 cup currants
- TOPPING
- 1/2 cup whole wheat flour
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp ground cloves
- 1/4 cup butter
Preparation:
Preheat oven to 375°.
Whip together the eggs, orange zest, vanilla, ricotta and sugar. Fold in the currants, and pour into the pie shell. Combine the topping ingredients in a food processor until the consistency of course meal. Spread over the pie.
Bake for 40-50 minutes or until center is firm.
