Recipe: Christmas Thumbprint Cookies

The Darby Field Inn in Albany, New Hampshire, is the source for this traditional recipe for thumbprint cookies filled with jelly. Reprinted with the permission of the Mount Washington Valley Chamber of Commerce and Visitor's Bureau.
Cook Time: 10 minutes
Ingredients:
  • 1/4 cup packed brown sugar
  • 1/4 cup solid vegetable shortening
  • 1/4 cup butter, softened
  • 1/2 tsp vanilla
  • 1 egg separated
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • colored sugar
  • strawberry or mint jelly
Preparation:
Heat oven to 350 degrees. Mix brown sugar, shortening, butter, vanilla and egg yolk. Stir in flour and salt until dough forms. Shape into one-inch balls; roll in colored sugar. Place balls about one inch apart on ungreased cookie sheet. Press thumb deeply into each center. Bake 10 minutes or until light brown. Cool. Fill thumbprints with jelly.
