Ingredients:

  • 1/2 cup butter
  • 1-1/4 cups brown sugar
  • 2 eggs
  • 4 Tablespoons unsweetened cocoa
  • 1-1/2 cups sifted flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups mint chips

Preparation:

Beat butter and sugar together until creamy. Add eggs one at a time. Add remaining ingredients and mix well. Fold in mints chips. Chill for one hour. Drop mixture from a teaspoon onto a cookie sheet. Bake for 10 minutes in a preheated 350-degree oven. Makes about three dozen cookies.
