Inn at Jackson's Chocolate Bark Recipe

This Chocolate Bark recipe comes from the Inn at Jackson in Jackson, New Hampshire. Reprinted with the permission of Country Inns in the White Mountains.

Ingredients:

  • 2 cups semi-sweet chocolate chips
  • 1 cup pecan halves, toasted
  • 1/4 cup dried crystallized ginger, diced fine
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, diced fine

Preparation:

Chocolate Bark Instructions

Place 1-1/2 cups chocolate chips in a microwave-safe bowl. Microwave on high in 30-second increments until just melted. Be sure to stir well after each 30-second interval. Stir in remaining 1/2 cup of chocolate chips until all chips are melted and chocolate is smooth. Pour chocolate on baking sheet lined with parchment paper and spread evenly, but not too thin. First sprinkle with ginger, followed by nuts, cranberries and apricots. You can use any chocolate, nuts or dried fruit combination that you like. Allow chocolate to cool and harden. Break into pieces. Makes 40-50 bite-size pieces.

this is tasty, not the ordinary choclate bark with just a few pieces of nuts or crushed peppermint candy.
