Hamburger and Hot Dog Relish Recipe

From Lorraine Mineweaser, for About.com

Want to make your own hamburger or hot dog relish? Lorraine Mineweaser shares this relish recipe featuring a variety of fresh vegetables. She says, "To make a lot, just double the recipe."

Ingredients:

  • 4 large cucumbers
  • 4 large zucchinis
  • 6 large onions
  • 1 green pepper
  • 2 red peppers
  • 3 Tablespoons salt
  • 2 trays of ice cubes
  • 3 cups cider vinegar
  • 5 cups sugar
  • 2 teaspoons celery seed
  • 1 teaspoon turmeric

Preparation:

Put vegetables through a grinder or food processor. Pour into a roasting pan, add salt and ice cubes, cover and let set overnight in the refrigerator.

The next day, drain well and rinse. Then add cider vinegar, sugar, celery seed and turmeric (it's a red spice). Cook on top of the stove, bring to a boil for about 10-15 minutes.

Put relish into sterilized, pint-size jars.
