Kim's Easy Cod Recipe

Try this easy cod recipe from Kim's New England kitchen the next time you need to whip up a healthy supper in a hurry.

Cod has been a New England food staple since the Pilgrims arrived on the region's shores. We even have an entire Cape named for this fish, which was found in remarkable abundance by early settlers.

This flaky, mild white fish is delicious and easy to prepare. From my New England kitchen, here's an easy recipe for breaded cod fillets cooked in a frying pan on the stovetop.

Ingredients:
  • 1 pound cod fillets
  • 1/ 2 cup flour
  • 1 egg, beaten
  • Italian seasoned bread crumbs
  • 1/4 cup olive oil
Preparation:
Lay out breadcrumbs on waxed paper.

Cover cod fillets with flour, then dip in beaten egg and coat the fillets with bread crumbs.

Heat olive oil in large frying pan on stovetop at medium–high temperature.

Cook cod fillets four minutes on each side.
