Maine outdoorsman Mark writes in: "I enjoy fiddleheads in a casserole. I merely substitute fiddleheads for green beans in a green bean casserole. Delicious Maine spring dish." When fiddlehead ferns
are in season, here's how you can try this easy dish.
- 1 can Campbell's cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon soy sauce
- Course ground black pepper
- 4 cups cooked fiddleheads
- 1-1/3 cups French's French Fried Onions
Mark says the recipe he uses appears on the back of cans of Campbell's cream of mushroom soup. You can also find the recipe instructions for Classic Green Bean Casserole
online at the Campbell's Kitchen Web site. Mark notes: "Other than the fiddleheads, the only other variation I use is lots of course ground black pepper."
