So, you found fiddleheads at a farmer's market or grocery store. If you're looking for a way to transform them into a delectable dinner, this recipe offers inspiration. "It is a very colorful dish and has wonderful spring flavor," says Cindy, who shares this recipe featuring fiddleheads and scallops.

Ingredients:

  • scallops
  • garlic to taste
  • olive oil or canola oil (or butternut squash seed oil, my favorite)
  • sweet red pepper, diced
  • fiddlehead fern buds
  • toasted slivered almonds
  • salt and pepper to taste
  • crumbled bacon (optional)

Preparation:

Saute garlic in oil until soft. Saute scallops until opaque. Stir in peppers and fiddleheads. Saute until ferns are dark green and slightly soft. Toss with toasted almonds. Add salt and pepper. Serve with a side of pasta. The amount of ingredients is very loose. Add more of whatever you like best!
