Now We're Cooking

Photo - Cheese Cookers at Cabot Cheese in Vermont

During a tour of Cabot Cheese, you'll see various stages in the cheese-making process. Here, we see one of the four cheese cookers--each can process 4,500 pounds of cheese at a time. It takes two hours to cook the milk, then the water and whey are removed. Tour guides explain the process as you proceed through the plant, and they're happy to answer questions about everything that happens from the cow to the shrink wrap.
